Ingredients
6 potato smiles
6 potato croquettes
8 reduced fat chipolata sausages
a little vegetable oil for frying
1 large carrot
1 gem lettuce
1 slice cheese
2 cherry tomatoes
1 slice of spring onions
2 slices of courgette
2 tbsp cooked frozen peas
Directions
• Cook the potato smiles and croquettes according to the packet instructions and fry the chipolata sausages.
• Arrange the potato smilesand croquettes in groups of three to make mummy, daddy and baby.
• Add halved chipolata sausages to form arms and legs.
• Arrange thin strips of carrot for hair (use a zester to make the strips).
• Make an apron for mum using gem lettuce and a strip of carrot, wrap a triangle of cheese around the croquette for the baby’s nappy,
and give the baby a small circle of carrot and a thin slice of spring onion for a dummy.
• Make a cap for dad using a cherry tomato and slice of courgette and give him a carrot bow-tie and peas for buttons.

Tip: For the boat you could fix salami and a piece of pepper onto a cocktail stick to make a sail and flag.
For the train use a piece of peperami for the funnel, with wheels made from courgettes and celery. For the car you could use tomatoes for the wheels.
Ingredients
1 Medium potato, wellscrubbed
15g grated cheese
salt
freshly ground black pepper
1 x 15ml spoon tomato relish or ketchup
25g mozzarella or cheddar cheese
You can use these or something similar to decorate: salami, red pepper, peperami sausage, courgettes, celery,
cherry tomatoes
Directions
• Bake the potato for 1 - 1 1/2 hours or until tender, and remove from the oven.
• Slice the top third off the potato lengthways. Using a teaspoon, carefully scoop out the potato flesh from
both parts into a small bowl.
• Mash the potato with a potato masher, season with salt and pepper, and mix in the grated cheese.
Put half the mixture into the larger potato shell. Spoon the tomato relish or ketchup on top, then smooth over
the remaining potato mixture.
• Mould into the shape of a boat, car or train and top with mozzarella or cheddar cheese.
• Place under a hot grill for 2 or 3 minutes, until the cheese is bubbling.
